This markup cannot be done using the "extract" function - the URLs or <title> content of product pages do not change depending on availability. Therefore, the GA code must be modified.

Step by step:
Go to “Content Groups” of the required view in the Google Analytics settings;

Add a new content group using the “+ CONTENT GROUP” button;

Add the group name. In the "Group by tracking code" section, click "Enable tracking code". "Done" and "Save";

On product pages in the Google Analytics counter code, depending on the presence, before the function for sending data to GA, ga('send', 'pageview');you need to add the line:
